Spiced Butternut Squash Bisque
Description
This Spiced Butternut Squash Bisque is a great addition to any holiday meal. Your guests will be pleasantly surprised at how healthy yet tasty it is!
Ingredients
2 onions, chopped
3 cloves fresh garlic, minced
1 large butternut squash, peeled, seeded and cut into 2 inch pieces (about 8 cups)
2 Granny Smith apples, peeled and cubed
1 quart low sodium chicken stock (preferably organic)
2 cups water
4 sprigs fresh thyme, left whole
2 tablespoons extra virgin olive oil
1/2 teasponn fresh grated nutmeg or ground nutmeg
2 cups Salba™ gel (recipe follows)
Sea salt and pepper to taste
1/2 cup sour cream (optional, as a garnish)

2 cups cold water
¼ cup whole Salba™ seeds
Cooking Instructions
For Salba™ Gel
Mix Salba™ and water together in a storage container.
Place in refrigerator overnight. The seeds soaked in water will form a thick gel and become soft.
For Bisque
In a large pot, heat olive oil and add onions.
Sauté over medium heat until softened, about 3 – 5 minutes.
Add garlic and cook for an additional 1 – 2 minutes.
Add squash, apples, chicken stock, water, Salba™ gel, thyme and nutmeg to pot.
Bring to a boil, reduce heat and simmer for 40 – 50 minutes uncovered, or until vegetables are soft.
Cool slightly and remove thyme sprigs from pot.
Using a hand held immersible blender, pureé soup until smooth. Alternatively, soup can be pureéd in a blender, working in batches.
If the consistency of the bisque is too thick, a bit of water can be added.
Season with sea salt and pepper to taste.
Re-warm before serving. Ladle into bowls and garnish with a dollop of sour cream, if desired.
