Sweet Potato & Apple Soup with Salba
Description
This delicious golden red sweet potato and apple soup is a zesty and sweet holiday soup. Enjoy it with crusty whole-grain bread for a hearty, low-fat lunch.
Serves 6.
Ingredients
1 Tbsp butter
3 leeks, thinly sliced
1 large carrot, thinly sliced
1 1/4 lbs. of sweet potatoes, peeled and cubed
2 large tart apples, peeled and cubed (we recommend Granny Smith)
5 cups water
2 Tbsp nutmeg, freshly grated
1 cup apple juice
1 cup evaporated milk
1 sprig cilantro
1/4 cup Salba Ground Seed
salt and pepper to taste
Cooking Instructions
Melt the butter in a large pan over medium heat, add leek and cover for 5-6 minutes until cooked, stir often until soft.
Let the soup cool slightly and then transfer to a blender and blend thoroughly.
Add carrot, sweet potatoes, apples and water to the pan and season with salt, pepper and nutmeg. Bring a to a boil and then reduce the heat and simmer covered for about 20 minutes.
Return to pot and add 1 cup of evaporated milk and heat till it reaches optimal serving temperature.
Add Salba Ground Seed, stir slowly and serve. Do not heat, just pour into 2 cup bowl.
