Salba Avgolemono Soup w/Orzo

An avgolemono soup is a soup that is made with chicken stock, eggs and lemon juice. It's very high in protein, with an infusion of fiber and omega-3s from Salba. Serves 6.
Ingredients
2 large eggs
1/4 cup fresh lemon juice
1 1/2 quarts chicken stock
1 cup chicken (optional)
1 cup uncooked orzo
1 onion, chopped
2 carrots, choppped
2 celery stalks, chopped
1/2 tsp oregano
1 handful dill, chopped
Cooking Instructions
Place the chicken stock, chicken, orzo, Salba Ground Seeds, onion, carrots, celery, oregano, salt and pepper into a pot.
Bring the soup to a boil and simmer until the vegetables are tender and the orzo is cooked, about 10-12 minutes.
Remove the pot from heat.
While the soup ois cooling, whisk the eggs in a bowl until frothy.
Whisk in the lemon juice.
Slowly whisk in some of the warm stock to temper the eggs.
Mix the egg mixture back into the soup.
Stir in the dill and serve.
