Salba Avocado Soup
Description
This soup is full of flavor and the avocado makes the soup unbelievably tasty and creamy. It is a perfect healthy treat for a dinner party or summertime gathering.
Ingredients
1 large, ripe avocado
2 Tbsp lemon juice
1 tsp olive oil
3/4 cup canned corn kernels, drained
2 tomatoes, peeled, seeded, and chopped
1 leek, chopped
1 garlic clove, chopped
2 cups vegetable broth
1/4 cup Salba whole seed, soaked in 3/4 cup water
Cooking Instructions
Peel the avocado, remove the nut and mash with a fork, stir in lemon juice and reserve until needed.
Heat the olive oil. Add corn, tomatoes, garlic, leek, and garlic.
Saut??© on low heat for 5-6 minutes until soft.
Put half of the vegetables mixture in a food processor or blender, together with the mashed avocado, the Salba gel and the hot vegetable broth. Process until smooth.
Transfer the mixture to a clean pot. Add the remaining vegetables.
Garnish with corn kernels, red chili or parsley.
