Salba Bread (GF)
Description
For people with gluten intolerance, finding a powerful Gluten-Free source of fiber can be a daily struggle. Well, celiacs, look no further. This GF bread recipe is extremely high in fiber - the Salba in this bread alone packs a whopping 17 grams of fiber.
Ingredients
??¼ cup Salba Whole Seed
2 cups warm water
4 cups Gluten-Free Sorghum flour mix (see below for instructions)
2 ??½ teaspoons dry yeast granules
1 tsp salt
2 tsp xanthan gum
2 eggs
2 tsp egg substitute
??¼ cup canola oil
Cooking Instructions
Preheat oven to 200 degrees.
Spray a large loaf pan with cooking spray.
In a small bowl, combine Salba with warm water and let sit.
Place all dry ingredients in mixing bowl. Combine well.
Add eggs, canola oil, and Salba mixture. Beat on high speed, 3 minutes.
Spoon into prepared loaf pans.
Turn oven off and place pans in warm oven. Let rise 40 minutes or until bread fills ??¾ of the pan.
Without removing pans, turn oven to 400 degrees and bake 40 minutes or until bread sounds hollow when tapped.
*Sorghum Flour Mix:*
* 7 cups sweet white sorghum flour
* 2 cups potato starch (corn starch can be substituted)
* 1 cup tapioca flour
