This simple, raw food recipe is gluten-free, and makes the perfect quick snack for an athlete. We prefer the version of this recipe sweetened with agave nectar, but the choice of sweetener is yours. Dress this recipe up with a fruit garnish, or enjoy it on it's own. Makes 2 servings.
Ingredients
2 Tbsp Salba Whole Seeds
1 cup nut milk (see recipe below)
strawberries, banana, kiwi, blueberries, or mango to garnish
Cooking Instructions
In a bowl stir the Salba seeds into the Nut Milk and whisk to break up any clumps.
Allow the mixture to set for 30 min - 1 hr, whisking occasionally.
Garnish each serving with your choice of fruit (optional).
*Preparing Nut Milk:* Blend the following ingredients together: * 1 cup raw almonds or cashews, soaked overnight, drained, and rinsed * 4 cups water Strain the liquid through cheesecloth or fine mesh strainer. Discard nut "meat" or reserve for another use. Pour nut milk back into blender and add the following ingredients: * 1 tsp vanilla extract or 1 vanilla bean * 4 Tbsp agave syrup, honey, or Stevia (substitute 4 dates) * 1/4 tsp celtic sea salt Blend until smooth. Adjust seasonings to taste.
