These Salba-, nut butter-, and whey-based balls, are the perfect anytime, on-the-run, cravings-busting, decadent snack choice that will never spike your blood sugar if the sweetener is smart. Because they are made with Salba they pack a serious nutritional wallop, which makes them a sneaky-good way to get more fiber and nutrients into your kidsâ?????? diet while standing in for expensive, sugary energy bars. Keep frozen and they're the perfect frozen candy bar upgrade! Even makes a healthy breakfast!
Ingredients
1 16-oz. jar of nut butter, such as almond, peanut, walnut, or a mixture (if you are seeking truly raw almond butter, Once Again makes one from Italian, unpasteurized almonds)
1/2 c. unsweetened, or xylitol- or stevia- sweetened quality whey protein powder (vanilla whey adds a nice flavor)
1/3 c. liquified virgin coconut oil (to liquify, just run hot water over the jar until oil is clear)
1/3-1/2 c. ground Salba. The more Salba, the more nourishing these balls are!
Smart sweetener to taste, like de-bittered stevia (NuNaturals makes it), or xylitol (I powderize it in a Vita-Mix for less granular texture)
1/2-1 tsp. sea salt, depending on how much salt is in the nut butter (the saltiness plays well against the sweetness of the chocolate, like a peanut butter cup.
Optional: unsweetened natural flavorings or extracts, such as walnut, almond, coconut, cherry, or spices like cinnamon or nutmeg.
Cooking Instructions
Mix together the above ingredients (and any additional optional filling ingredients below) in a large bowl (adjusting sweetness and flavorings to taste).
Freeze for an hour or so to achieve workable texture to facilitate palm-rolling into walnut-sized balls. Freeze balls again before rolling in coatings below.
*Optional Filling or Coating Ingredients:* The following can either be blended into the ball mixture, or rolled on the surface of the frozen balls, before or after dipping in the melted chocolate mixture (I recommend re-freezing balls after rolling so that they can be dipped into the melted chocolate without falling apart):
- Unsweetened, shredded coconut
- Crushed nuts
- Dried goji berries
*Melted Chocolate Coating:* Place the below ingredients together in a double boiler or a metal bowl over simmering water, stirring occasionally until melted. Dip the frozen balls into the melted chocolate mixture covering them completely, then place a half an inch apart on a cookie sheet or in a brownie pan in the freezer until set. ENJOY frozen!!
- 6 oz. unsweetened (preferably organic) chocolate
- 2 Tbsp. organic butter or virgin coconut oil
- Smart sweetener (see above) to taste. I often use a few drops of vanilla stevia liquid for this
