Salba Oriental Chicken Salad
Description
This recipe is a smart way to put leftover chicken breast to good use in a zesty, healthy recipe that will last about 1 week, refrigerated. A great summertime or springtime snack that the whole family will enjoy.
Serves 2-3.
Ingredients
4 Tbsp Salba Whole Seeds
2 chicken breasts
6 cups water
2 Tbsp soy sauce
3 celery stalks
1 Tbsp vegetable oil
1/4 ground ginger
1/4 tsp black pepper
Cooking Instructions
Quickly toast Salba Whole Seeds in the oven.
In a large skillet, cook water, chicken breasts, spices, and soy sauce over medium-high heat.
Add chopped celery to the skillet after about 10 minutes and continue to cook for 2 additional minutes.
Drain the mixture and allow to cool. Cut the chicken into 1/2-inch cubes.
In a medium bowl, combine cooked mixture, chicken, vegetable oil, ginger, pepper, and Salba seeds.
Stir thoroughly and serve chilled.
