Salba Couscous Salad (Vegetarian)

This heart-healthy dish is inspired by Arabian cuisine. It's quick and easy (takes about 20 minutes to prepare) and perfect for the vegetarian seeking to improve the omega-3/6 balance in their diet. This salad goes great with roasted lamb filet marinated in a mint-tamarind vinaigrette. Serves 4-6.
Ingredients
2 1/2 cups water
2 cups couscous
1/4 cup Salba Seed Oil (or olive oil)
1/2 cup rice wine vinegar
1/2 Tbsp ground cumin
1 cup Salba Whole Seeds
1/2 cup onion, finely chopped
1/2 cup zucchini, chopped
1/2 cup cucumber, finely chopped
1/4 cup green bell pepper, finely chopped
2 Tbsp mint, fresh, chopped
1 sprig of mint to garnish
salt and pepper to taste
Cooking Instructions
In a large saucepan, bring water to a boil.
Remove from the heat, stir in the couscous and cover.
Let sit for 5 minutes, being careful not to over-heat.
Remove lid and fluff couscous with a fork. Slowly add the Salba Seed Oil and continue to fluff.
In a small bowl, whisk togethere the rice wine vinegar and ground cumin. Add to the couscous and fluff again.
Gently stir in the remaining ingredients. Add salt and pepper to taste.
Serve at room temperature or chilled.
