Salba Chicken with Curry Yogurt Sauce

This dish, inspired by Indian cuisine, is as rich in flavor as it is in heart-healthy nutrients. A hearty, one-dish meal, this recipe is very easy to prepare. Use Salba Seed Oil instead of olive oil for one of the most omega-3 rich dishes you will find anywhere. Serves 4.
Ingredients
4 boneless, skinless chicken breasts
1 cup plain yogurt
1/2 cup Salba Ground Seed
1 cup chopped onion
1 cp chopped red bell pepper
4 cloves chopped garlic
2 Tbsp Salba Seed Oil (or olive oil)
1 Tbsp curry powder
salt and pepper to taste
Cooking Instructions
Heat the oil in a large skillet over medium heat.
Add the garlic, onions, and bell pepper.
Cook, stirring often, until vegetables begin to soften.
Stir in the curry powder and continue to cook for about 1 minute.
Season the chicken breasts with salt and pepper. Add chicken to the skillet and and cook, stirring often, until chicken is cooked through.
Add the yogurt and Salba Ground Seed, stirring briskly to mix all ingredients together. Cook for an additional 3 minutes, stirring often until the sauce is hot.
Serve hot with rice, if desired.
