Salba Chicken Parmesan

This classic Italian-American dish is served with penne pasta, preferably the whole wheat variety. High in fiber and protein, this healthy alternative is infused with fiber, omega-3s, antioxidants, and much more. Serves 2.
Ingredients
2 large chicken breasts
1/2 cup mozzarella cheese
1 large egg
1/2 cup grated parmesan cheese
1/2 cup bread crumbs
3 Tbsp Salba Ground Seeds
1 cup penne pasta, uncooked (we recommend wheat penne)
1/4 cup Salba Seed Oil (or olive oil)
Cooking Instructions
In another small bowl, mix together bread crumbs and parmesan cheese.
In a small bowl, beat egg well and mix in Salba Ground Seed.
Dip each chicken breast into egg mixture, fully coating on all sides.
Then, roll chicken breast in bread crumb and cheese mixture.
In a large skillet, heat oil and add chicken. Cook chicken thoroughly for about 10 minutes over medium heat.
After 8 minutes, add mozzarella cheese, allowing it to melt over the chicken.
Add chicken to cooked penne pasta and top with marinara sauce.
