Tofu Salba Rice Bowl (Vegetarian)
Description
A light and delicious vegetarian meal, packed with fiber, omega-3's, and soy protein. This dish is easy to prepare and perfect for a group of friends.
Serves 2-3.
Ingredients
2 cups rice
3 ??½ cups water
1 yellow bell pepper, thinly sliced
??½ green bell pepper, thinly sliced
6-8 oz. of tofu, firm, pressed, drained, and cut into 3/4" cubes
4 garlic cloves, unpeeled
4 Tbsp Salba Whole Seeds
2 Tbsp Salba Seed Oil
1 Tbsp parsley, finely chopped
1/4 tsp salt
1-2 Tbsp soy sauce (to taste)
Cooking Instructions
Rinse the rice and soak in 3 ??½ cups water.
Toast the Salba seeds.
Cook the rice with a pinch of salt. Let stand for 5 to 10 minutes.
Peel the garlic cloves and mince. Chop the peppers into small squares. Saut??© the peppers and garlic in a skillet with Salba Seed Oil until tender.
Add the tofu cubes and soy sauce to the skillet, mixing thoroughly. Continue to saut??© until tofu reaches desired texture.
Put rice into a bowl and top with tofu, peppers, and garlic mixture.
Sprinkle on Salba seeds and finely chopped parsley.
