Salba Mushroom-Stuffed Chicken

This is an extremely easy recipe and a major crowd pleaser - as long as your crowd likes mushrooms. Serve this heart-healthy dish with asparagus or steamed spinach. Serves 4.
Ingredients
4 chicken breasts
1/2 cup chopped mushrooms
1/2 cup grated onion
1/2 cup Salba seed
20 whole grain crackers
1/4 cup cream
3 Tbsp margarine
1/4 tsp salt and pepper
Cooking Instructions
Cut the chicken breasts open, add salt and pepper.
Mix mushrooms with cream, onions, Salba seed, and half of the crushed crackers.
Stuff the chicken breasts with the mushroom mix, using toothpicks to hold each breast together.
Place the stuffed breasts in a greased pan, coat with the rest of the crackers, and lightly coat with margarine.
Bake at 350 degrees for 30 minutes.
